Sinepuxent Receipts – Joe Davis’s Peanut Brittle

Makes 1 lb. 

 

 

 

 

 

Joe Davis’s Peanut Brittle  

1 cup Sugar

½ cup Light Corn Syrup

1 cup Salted Peanuts

1 tsp. Butter

1 tsp. Vanilla Extract

1 tsp. Baking Soda

Mix Sugar and Corn Syrup together.  Microwave 4 minutes on high.

Remove from oven and add peanuts.

Mix and microwave 5 minutes on high.

Remove from oven and add Butter and Vanilla Extract

Mix and microwave 1 minute on high.

Remove from oven and add Baking Soda.

Mixture will foam. Pour onto greased (I use Pam) cookie sheet and allow to cool. Crack it and put it into airtight container.
