IMHO, pizza is a tomato pie. You should focus on flavorful sauce, lightly topped with quality ingredients. Also having a crust that has flavor (not just plain soft flour, or worst burnt toast bread) one that is light and airy (and soft) inside, with and nice light crunch to the outside of the crust.
Too many places use generic crust, a thin wipe of bland sauce, and then pile on a bunch of greasy cheese and call it a pizza.
NY Pizzaria on Milford St. The very best anywhere. I bet Bradley could make this for you. It kinda looks like lasagna, doesn't it? Man! I'm gettin' REAL hungry!
Somebody needs to cut the cheese.....
ReplyDeleteNasty mess

There's a spatula barely visible, 10:25.
