I wanted to write to share with your readers the absolutely atrocious dining experience my family and I had last night at Chef Fred’s. Let me say first that my parents, myself and my husband eat at Chef Fred’s on a regular basis. We have always enjoyed the fact that we could get a quality meal in a relaxing atmosphere with good service. It’s somewhere we could go to “dine” as opposed to just “eat”. I’ve kept up with all of the recent drama being reported at Chef Fred’s [stabbing, fights, etc] but looked at them as isolated instances, until now. It’s now that I see Chef Fred’s caters to that crowd.
So, last night, after church, my parents, aunt, husband, infant son and I went to Chef Fred’s for dinner. We were looking forward to being able to sit down and relax with a good meal and good conversation. That did not happen. We arrived at Chef Fred’s at 7:30 and were seated in the dining area of the restaurant. There was a large party of approximately 25 people, 2 tables of 4 people and 2 tables of 2 also in the dining area. 15 minutes after being seated, our server still had not made an appearance. My father finally asked the hostess to please send our server to our table so that we could order drinks. [I don’t think that our server even knew or realized up until then that she had another table to wait on. From what I could tell, our waitress had one other table in the entire restaurant]. We got our drinks 20 minutes after we ordered them. An hour after we first entered Chef Fred’s, we finally got our salads and appetizer. 30 minutes later, our plates had been cleared for some time, but we still had no entrees.
At this point, all of us were feeling extremely frustrated with the service we had received. My father asked to speak to the manager [Brenda], who had stayed pretty well unseen most of the night. My father spoke to her about the poor service and stated that it appeared that the restaurant was understaffed. The manager proceeded to argue with my father, that “no, the restaurant is not understaffed”. She said she would find out what was going on and would be back. Back into the kitchen she went and our entrees came out soon after that. My father told our server that he had spoken to the manager about the length of wait for drinks, appetizers and our meal. Our server replied that our meals had taken so long because my father wanted his burger well done. How a well done burger can cause a meal to take an hour to prepare is beyond me. When we finally got our food, it had been 2 hours since we had first entered Chef Fred’s. My aunt and father’s burgers both tasted like they had been previously cooked then re-warmed. My husband was given the wrong fish entree. Disappointingly, the manager never appeared in the dining area again to follow up on our previous concerns. [She helped deliver our entrees to us, brought us some ketchup and was gone].
Then, as we’re finally eating our dinner, I saw the entire atmosphere of the restaurant begin to change. Even though we were in the dining area, people began milling and mingling about the area. People were walking and standing right beside our table, talking loudly and sipping their drinks as the bar crowd took over the entire place. Bouncers started patrolling, dressed like swat team members; two of which posted at the door with metal detectors. Nobody at our table was even able to have a conversation because it was so loud and congested all around us. It felt like diners were being stampeded out of the once peaceful dining area. We scarfed down our meals and got out of there after paying the full bill of $120.
So, thinking about the horrible experience we had, it occurred to me that no one really even apologized for any of the many problems we experienced. No one cared about the poor service, food and atmosphere. And why? Sadly, I feel that Chef Fred’s doesn’t care about the old, boring customer who just wants a nice meal. They want the flashy party crowd that’s going to throw dollar after dollar away on liquor. So it’s no major loss to them if we leave thinking “I’m never going back there again”. They would rather cater to the very people that are, at least in this case, driving their loyal customers away. It looks like Chef Fred’s is content to become another bar in Salisbury where the police are called to once or twice every Saturday night for fights, stabbings, etc. and the restaurant will continue to place blame everywhere but where it is deserved. We will now being taking our business to other restaurants where quality and customer service is top priority."

I understand how these people felt. Something similar happened to me there. Don't get me wrong, I've had many good times there. Lately it's not the same as it was. I miss Johnny & Sammy's.

This country is slowly losing the moral values that are needed to keep it alive and safe. We have already lost most of the religion in our younger people. This has led to crime and people without values or ethics. They do not know the difference between right and wrong. With the present administration it will sink deeper into a crime infested country. Again , I would like to thank obama for his help in the destruction of this country. How do you people like the change now? This type of behavior is gaining strength in most public places. We experienced the same at other places. Walmart is a very good example.
ReplyDeleteIt's all about alcohol sales. The money made of food service is nothing compared to the profit on alcohol sales. They have to keep up the restaurant food sales in order to keep the liquor license as their license is not primarly a bar, but food sales as well. I was totally suprised that Fred and Brenda have gotten this far. They are a washed up cook and waitress that has made the rounds at all of the former salisbury restaurants and bars.
ReplyDeleteFirst, I'm a younger guy(24 years old), and since my first time going into Chef Fred's it's been a bar spot. If a person has regularly gone to Fred's in the last few years, they wouldve clearly noticed that's how the place is. To write a 4 paragraph manifesto about it, is laughable. Sorry to whoever you are, but even this 24 year old doesn't go to Fred's expecting anything but what you recieved(which is why Fred's isn't a spot I'll go for a dinner).
ReplyDeleteThe writer stated that they wished to dine in lieu of just "Eating" then ordered hamburgers lol Just kidding. Best to just show your displeasure by locating the owner and expressing your displeasure. On the other hand, the owner probably knows what is going on but is looking at the bottom line. On another note, I too would miss Johnny's and Sammy's were I still there. There is still Market Street Inn and Goin Nuts and hopefully they maintain a bit of decorum jackkcharl@aol.com
ReplyDeleteBrenda is Freds wife..so he was speaking to the owner...I too had dinner there..cold reheated baked potato and salad looked like it was scraped together to make enough. I miss Johnny and Sammys too. This would be a great time for someone to open a "good" restaurant with customer service. with no no alcohol on the menu.
ReplyDeleteI had pretty much the same experience there 7 years ago. It two hours and still no food, when we said we were leaving we were presented with the ENTIRE bill, including the charge for food we hadn't received + 20% gratuity. They threatened to call the cops if I didn't pay. I called their bluff and we left. I haven't set foot in there since. There are plenty of restaurants in Salisbury.

I started going to Chef Freds about 4 years ago, went very often for another two years, and saw the transformation. Shame. btw, the power of this blog best not be understated, I surely won't go now. Havent been to Brew River since the reviews went south on here.
ReplyDeleteSince I was in the Bar/Restaurant business with an establishment of my own, here is my suggestion.
ReplyDeleteI have been the Chef Fred's numerous times and have always enjoyed my experience.
However, there is a solution to this problem and quite frankly it's a simple one.
They need to divide the dining area from the Bar. This would not be difficult at all to do since most of the walls are already in place.
Considering the time of evening this customer went to dine, they do deserve to be divided from the bar crowd and the 24 year old who sent in a comment earlier is one of the disrespectful customers who believes this is a bar first. You are wrong. The bar crowd usually comes in much later.
Nevrtheless, put two doord going into the dining area closest to the bathrooms and close it off. Make a smaller opening and or doors from the front entrance as well. This should quiet things down and keep the bar customers from hanging out in the dining area. Case closed.
Johnny and Sammys! The Alpine Room!! Boy do I miss the great food, great service, great atmosphere! Nothing in Salisbury now comes close, ....well, except for Restaurant 213, which is fabulous; pricey but well worth it!
ReplyDeleteThis person's first problem is that they chose Chef Fred's for a nice dining experience. Come on - there are much better restaurants in the city. When thinking of a nice place to eat dinner Chef Fred's would never even cross my mind.

ReplyDeleteto 9:26 - good luck opening a restaurant that doesn't serve alcohol. It doesn't have anything to do with serving it - it's the pricing of it, the hours of the establishment and the atmosphere they create.

ReplyDeleteyou are right. market street keeps their bar completely separate from their dining area. the two don't mix and because of that, both types of customers are able to enjoy their evening without "bothering" each other.

ReplyDeletechef fred's has not been a "bar spot" for the past few years. up until recently, they seemed to take pride in their food and service. if people were there for the bar scene, they could have their fun in the bar area. people who were there for a good meal could sit in the dining area. there seems to have been an acute change as of late where the restaurant is allowing the bar crowd to overrun the entire restaurant.
by the way, i think that if chef fred's is going to cheapen the atmosphere of the restuarant by turning it into more of a bar spot, then they should probably take a look at lowering some of those hefty entree prices! :)
same experience Saturday night. Food was good, service was good. I agree with the other post that Chef Fred's needs to make their mind up BAR or Restraunt? No one wants to spend $120.00 to $160.00 for a dinner to not be able to sit and relax after eating and enjoy what they just spent there money on. My table ate and left due to the crowd moving tables and being loud as well. It is a shame they used to have it all, a family could go there have a nice meal, cocktails if they choose and enjoy themselves. Now a family would be nuts to subject there kids to this.
ReplyDeleteI have eaten at Chef Fred's periodically over the last few years. It has never been at the top of my list, but I do like some of the entrees. As I was reading this customer's posting, I see that the time spent at the restaurant was maybe 2 hours. Had the meal been served on a timely basis, then they would have been out of the restaurant before the "bar crowd" arrived.
ReplyDeleteCome on people, it's big business vs small business. Are the people in this area going to support a nice place to eat, or are they looking for the all you can eat for cheap? A restaurant needs more than a handful of people to dine there to make it. Joe did have a possible solution in his comment, but that to costs money too. It sounds like they were 5 plus baby people eating there, they had drinks, appetizers, and meals for $120, do you think the restaurant made any money on that table? It's been proven that the largest money maker for a restaurant is in the booze (at least the places I've worked -- never worked in a franchise restaurant!) If we want small businesses to survive we need to support them, why do we only hear about the bad experiences with business, big and small? I've not been to Chef Fred's for quite some time for dinner, but have been there for many catered events that have been great. Maybe the "bar scene" people came out early on Sunday to watch Team USA Hockey that started at 3 pm..... By the way, I heard that Station 7 was a hugh sucess with their chuck wagon at the Salisbury Kennel club Obedience Trial this past Sat and Sun! So come on readers, lets support our local small business and give them praise sometime. I'd love to read positive comments to start my day on a happy note! cj

ReplyDelete11;27...Ruth"s Chris offers a special for two five days a week priced at around $60 per couple. You get an entree, vegetable and a shared dessert. If you lay off the drinks you can easily be out the door for under $80 for two people.

ReplyDeleteI can have a better meal at Cactus Taverna or Namaste for half the cost of Ruth's Chris. The only thing the extra $40 gets you at Ruth's is bragging rights...if you care about that sort of thing.

4:09...I don't disagree with you at all about supporting local restaurants ( if they are good- some are and some are not)...but Ruth's Chris IS owned by a local man...Tom Ruark.I have eaten there several times and have enjoyed it.
